Tips On Storing Royal Icing
You’ve used most of the royal icing you made for that birthday cake, but you have to ice another small cake next week, and the icing leftover would be just enough for it. Can you store this royal icing?
Yes, you can, but it can dry out or crumble if left in the wrong conditions. So, read on to learn a bit more about how to keep it fresh and usable for as long as possible.
Storing Royal Icing At Room Temperature
Using a container at room temperature, royal icing can stay good for 2-3 days.
- Ensure to press a piece of cling film against the surface of the icing to prevent crusting from air exposure. Close the lid tightly, and it is done!
- Remember, if your royal icing is watery, it is more likely to separate. So try to use it sooner rather than later!
Storing Royal Icing in a Fridge
Assuming you use an airtight contained, royal icing can stay good in your fridge for about 14 days. Follow the same steps for storing at room temperature. When you want to take it out to use it, remember the following:
- When thawing, allow the icing to heat up to room temperature before using.
- Watery icing is more likely to separate in a fridge. The longer it stays in the fridge, the more likely you will need to put it in a mixer.
- If, after some time in the fridge, the icing is grainy, it is time to dispose of it.
Storing Royal Icing in A Freezer
To ensure it stays in good condition in a freezer, place it in an airtight container. That way, it can be stored for months or even years!
- Make sure you have baking soda in your freezer, and take note of other items in the freezer that may impact the taste/odor of the icing.
- To defrost the icing, allow it to come to room temperature.
- Remix the icing in a mixer if you need to. If anything feels or tastes odd, dispose of it.
