So, if you want to ice a cookie with a specially colored and flavored royal icing, read on. Here, we will walk you through how to make royal icing with a delicious and delicate strawberry taste. 

 

What You Will Need

If you want to make your royal icing a bit pinker, you can add gel food coloring. Then, it can be as pastel or as vibrant pink as you want it to be without impacting the taste.

 

  • 5 tablespoons of Genie's Dream meringue powder.
  • 4 tablespoons of freeze-dried strawberry powder (available on Amazon, or local grocery stores). 
  • 1 cup of warm water.
  • 2 pounds of confectioners' sugar.
  • Stand mixer with a paddle attachment.
  • DecoPac Premium Gel Food Color in Pink to make it SUPER pink 😉

How To Make The Pink Royal Icing:

 

Step 1- Using a stand mixer, whisk together the meringue powder with the water in a bowl. Wait until a light foam forms.

 

Step 2- Add the strawberry powder and combine them. If you want to add pink gel coloring, this is the step to do it!

 

Step 3- With the paddle attachment, beat the icing for 1 minute on medium-low speed. Scrape the bowl as needed until everything is combined.

 

Step 4- Add a pound of the confectioner's sugar. Mix it in until it is just incorporated. Scrape the bowl and then add the rest of the sugar to the mixture.

 

Step 5- When all of the sugar has been added, increase the speed of the mixer to medium-high and beat the icing for around 5-7 minutes. The icing will double in volume.

 

Step 6- Use this icing to decorate the cookies. If you need the icing to be a thinner consistency, add a little bit of warm water, a teaspoon at a time, until the icing is the desired consistency.
