How To Make Tasty Vegan Sugar Cookies

If you know someone who is vegan, and you are a fan of making cookies, you may have worries that you won’t be able to make any sweet treats for them. This is not the case, and here, we will walk you through how to make the tastiest vegan sugar cookies. No one will know the difference!
What You Need To Make Vegan Cookies
- 2 cups coconut sugar
- 2 cups solid coconut oil
- 6 tablespoons aquafaba (chickpea brine)
- 2 teaspoons vanilla bean paste
- 1 teaspoon almond emulsion
- 6 cups all-purpose or plain flour
- Food mixer
- Parchment paper
Making The Cookies
Remember, veganism is all about removing animal products from food. If you are making these for a vegan friend, always double-check that the ingredients are vegan-friendly. You can even swap out coconut products for oat-based ones if you need to!
Step 1 – Cream the coconut oil and coconut sugar until fully combined in a mixer.
Step 2 – Next, you’ll need to add the aquafaba, the vanilla bean paste, and the almond emulsion. Be sure to add 1 ingredient at a time and ensure they have mixed well each time. Make sure all the ingredients are combined before moving on to step 3.
Step 3 – Add the flour to the mixer. Only do 2 cups at a time, and remember to scrape the bowl in between additions to prevent clumping. Mix until the flour is well combined, but do not overmix.
Step 4 – Once combined, prepare your dough for rolling. Take the cookie dough out of the mixing bowl and separate it into equal portions. Place each part between 2 sheets of parchment paper. Use precision rolling pins to make sure the dough is of equal thickness.
Step 5 – When you have rolled out all the cookie mixture, cut them with the cookie cutters of your choice, maximizing the amount of dough each time by carefully positioning the cutters. Take note of the dough texture; if it is soft, refrigerate it for 10 minutes. Bake the cookies at 350 °F for 10-15 minutes.
Step 6 – Remove from the oven and allow to cool. Decorate using vegan-friendly royal icing.
