When making a red velvet cake at home, there is only 1 addition you need to make it perfect: cream cheese royal icing. 

 

The recipe for this sweet and rather tangy royal icing is not as well-known as buttercream, so here, we will walk you through how to make it and offer you some tips.

 

What You Will Need

        5 ½ tablespoons meringue powder

        ½ teaspoon cream cheese baking emulsion

        2 lbs confectioners’ sugar

        1 tablespoon light corn syrup

        3.5 ounces of warm water

        1 ounce softened cream cheese

        Stand mixer with paddle attachment

 

How To Make The Icing

  1. Firstly, you will need to sift the sugar; this will make the icing smoother. Put to the side after.
  2. In your stand mixer, add the meringue and the warm water. Beat this together until you’ve dissolved the meringue.
  3. Add 1 pound of the confectioners’ sugar. Mix this in on low speed until it is incorporated.
  4. Add the corn syrup and the emulsion. Beat these together on a low speed for 30 seconds to 1 minute.
  5. Add the rest of the sugar and beat with the paddle until it is incorporated.
  6. Increase the speed of the mixer to high and mix. It will turn white and fluffy.
  7. Add the softened cream cheese and mix with the paddle for 20 seconds until incorporated.
  8. Now, remove the bowl, and using a spatula, scrape the sides of the bowl and fold. This will help you to mix the cream cheese without overbeating the icing.

 

Top Things To Remember About Cream Cheese Icing

 

        It is not as firm as royal icing. It will work well for flooding, lines, and decoration. 

        It may be hard. To soften it, use a brick of full-fat cream cheese. Make sure the cream is softened first by microwaving it.
