- 2 cups of white granulated sugar or caster sugar.
- 2 cups of unsalted butter or margarine, softened to room temperature.
- 2 large eggs.
- 2 teaspoons of vanilla bean paste or vanilla essence.
- 1 teaspoon of mint emulsion.
- 6 cups of plain or all-purpose flour.
- 1 cup of milk chocolate shavings (make sure there are no big pieces!).
- Satin Ice Food Colorant in Green.

How To Make Your Mint Chocolate Chip Sugar Cookies
Step 1- Preheat the oven to 350 degrees F. Cream the softened butter and sugar in your stand mixer. Stop when it is fluffy and lighter in color.
Step 2- Add the 2 eggs, the vanilla bean paste, the mint emulsion, and a couple of drops of the green food coloring. Carefully add the coloring one drop at a time and mix it all together until all of the ingredients have combined.
Step 3- In another bowl, whisk together the flour and the chocolate shavings. Add this to the mixer bowl at 2 cups per addition. Scrape the bowl between adding the flour and mix until all the ingredients are combined.
Step 4- Split the dough into equal portions. With a precision rolling pin, roll it between 2 sheets of parchment paper. This will ensure equal thickness.
Step 5- Once you have rolled the dough, cut the cookies with your chosen cookie cutters. Bake in the oven for 10-15 minutes.
