How To Make Red Velvet Cookies
Ingredients
- 2 cups sugar (granulated or caster is best)
- 2 cups butter (softened)
- 2 large eggs
- 1 teaspoon vanilla bean paste
- 1 tablespoon red velvet food coloring
- 5 ½ cups all-purpose or plain flour
- ½ cup cocoa powder
- 1 tablespoon red velvet emulsion
- Food mixer with paddle attachment
- 2 sheets of parchment paper
- Heart Shaped Cookie Cutter (optional)
Directions
1. Cream the softened (room temperature) butter and the sugar until they are combined. They should be light and fluffy in color.
2. Add the eggs, the vanilla bean paste, the red velvet food coloring, and the red velvet emulsion one at a time. Mix until everything is well combined.
3. Whisk together your flour and cocoa powder in a separate bowl.
4. Add the combined powder to the mixer 2 cups at a time. Be sure to scrape the bowl here between adding the cups to prevent lumpy cookies! Mix until all the ingredients are combined.
5. Divide the dough into equal portions. Then, roll it between the 2 sheets of parchment paper. If you need help getting the thickness of the cookies right, you may want to use a precision rolling pin.
6. Cut the dough with a cutter of your choice. Remember, red velvet is perfect for Valentine's Day, so it may be worth investing in some heart-shaped cookie cutters.
7. Bake the cookies at 350°F for between 10-15 minutes.
