This tasty recipe is all you need when you are looking to make cookies for a summer party, a barbecue, or even a bake sale. Best of all, it is a simple recipe that can be fun to make with kids.

 

How To Make Lemon Cookies

 

Ingredients

 

  • 2 cups caster or granulated sugar
  • 2 cups butter. Make sure it is softened to room temperature before use
  • 2 large eggs
  • 2 teaspoons of either vanilla bean paste or vanilla extract
  • 1 teaspoon lemon emulsion
  • 1 tablespoon lemon zest
  • 6 cups plain or all-purpose flour
  • Food mixer with a paddle
  • Cookie cutters 
  • Parchment paper
  • Precision rolling pins

Directions: 

If you want a softer taste of lemon, you can remove the zest!

 

Step 1 - If you don’t want the lemon zest, skip to step 2. If you love the zingy flavor, whisk the lemon zest and the sugar together. Allow it to sit for a couple of minutes, as this will bind the lemon flavor to the sugar and add to the boldness of the cookie taste.

 

Step 2 - Cream the room-temperature butter and the lemon sugar (or plain sugar) together using your mixer.

 

Step 3 - Add the eggs 1 at a time. Now, it’s time to add your flavors. Add the vanilla bean paste (or extract) and the lemon emulsion into the mix. Make sure they mix well until everything is combined.

 

Step 4 - Add the flour to the mixer 2 cups at a time - this will prevent a flour explosion! Scrape the bowl between adding the flour to avoid a lumpy mixture – this will impact how well they taste, being more coarse than expected!

 

Step 5 - Divide the dough into equally sized portions – this makes it easier to roll. Place the dough between the prepared sheets of parchment paper to prevent the rolling pin from sticking to the dough and to make it easier to transfer to a baking tray, and roll it out to an equal thickness. Equally thick cookies ensure they cook at the same speed.

 

Step 6 - When the dough is rolled, cut the cookies and place them onto a baking tray.

 

Step 7 - Bake them for 10-15 minutes at 350 °F.
