When you love the perky and intense taste of coffee, you will want to try it with everything. Chocolate and coffee? Check! Coffee and cookies? Check! Coffee-flavoured cookies? It's not as likely to be checked off this tasty list, but it can be soon enough. Here, we will walk you through how to make coffee-flavored cookies, which are great at parties or when you have guests who love to indulge in a coffee.
What You Need For The Cookies:
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 cups butter (softened)
- 1 large egg or 2 medium eggs
- 3 tablespoons hot water
- 1-1/2 teaspoon espresso powder. If you want to add espresso powder with added flavor like vanilla, that's fine too!
- 1 teaspoon vanilla bean paste
- 2 teaspoons coffee emulsion
- 6 cups all-purpose or plain flour
- ½ cup cornstarch
- Food mixer with paddle attachment
- Parchment paper
Making The Cookies
Add as much coffee powder as you want to these cookies. If you like strong coffee, 2-3 teaspoons of espresso powder. Just dial it back on the coffee emulsion!
- Sift together the all-purpose flour and the cornstarch.
- In the mixer, softly cream the softened butter and the sugar. Make sure it is light and fluffy when it's mixed!
- Dissolve the espresso powder in 3 tablespoons of hot water.
- Add the eggs, the vanilla bean, the coffee emulsion, and dissolved espresso powder 1 at a time to the butter and sugar mixture. Make sure they mix well.
- Add the flour to the mixer 2 cups at a time, and be sure to scrape the bowl between adding the flour to avoid lumps. Do not overmix.
- Once it has formed a dough, divide it into equal portions. Roll it between the 2 sheets of parchment paper. To get an equal thickness in the dough, use a precision rolling pin.
- Once the dough has been rolled, cut the cookies with the desired cutter shape and bake the cookies at 350 degrees F for 10-15 minutes.
- Allow to cool before consuming or decorating if you want.
