Traditionally, royal icing recipes use egg whites, but this one uses meringue powder instead. Meringue powder is a mixture of stabilizers, sugar, flavorings, and dried powdered egg whites. Although it contains egg, meringue powder eliminates the need for using raw egg in your royal icing.

How Easy Is It To Make Royal Icing?
Royal icing is super easy to make. This recipe contains just a few ingredients and can be whipped up in 10 minutes.
Can I Color Royal Icing?
Yes! Injecting color into your royal icing is simple using Premium Gel Food Colorant or the Liquid Gel Colorant by Satin Ice.
Royal Icing Recipe
Ingredients
- 1/3 cup meringue powder
- 1 teaspoon vanilla extract
- 1 tablespoon light corn syrup
- 2 pounds of powdered sugar
- ½ cup warm water
- Lemon juice (optional)
Instructions:
- Add the meringue powder and warm water to your stand mixer and whisk until doubled in size.
- Add the vanilla and lemon juice, if using, and mix until just combined.
- Use the paddle attachment to mix in half the powdered sugar.
- Mix in light corn syrup.
- Mix in the rest of the powdered sugar until just combined.
- Mix on high for 3 minutes until it looks white and fluffy. If it is too stiff, add some more water until it is the desired consistency.
Tips:
For best results, start with stiff icing and gradually add more liquid if needed. Don’t forget that coloring it means adding more liquid which will loosen your icing.
