How To Make Macarons - The French Way!
A delectable, sweet confection, macarons are a must-have snack at any garden party.
You may have heard that they are hard to make. This is not the case, and with our simple recipe, you will be baking macarons like a pro in no time at all!
How To Make French Macarons:
Ingredients:
Please note that with this recipe, the weight of the ingredients is paramount to getting the right outcome.
- 150g egg whites
- 150g granulated sugar
- 179g confectioners’ sugar
- 197g blanched almond flour (without skins)
- Food processor
- Stand mixer with a whisk attachment
- DecoPac Premium Gel Food Color

Macaron Cookie Stencils
Instructions:
- Preheat the oven to 290 °F.
- Using a food processor, pulse the confectioners’ sugar and the almond flour. Do not overmix.
- With the stand mixer, whisk the egg whites at medium speed until they are foamy.
- Add 50g of granulated sugar. Whip in until the mixture grows. Add 50g of the remaining sugar.
- When the meringue forms (it will look like little waves). Add the remaining 50g of sugar and turn the speed of the mixer to medium-high. Continue until the meringue is stiff.
- Sift the dry ingredients and pour them into the meringue. Fold until combined. Try not to release any air here!
- To color the macarons, divide the batter into separate bowls and add the gel colorant. Make sure it is blended through the mixture.
- The batter will be ready when it is in the ribbon stage. When you lift a spatula out of the bowl, it falls back in smooth ribbons.
- Put the batter into piping bags. Make the macarons on silicon mats or parchment paper.
- Set the macarons aside and allow them to dry. This will take 20-50 minutes.
- Bake one tray at a time for 15-18 minutes.
- Let them cool, and fill them with buttercream, jam, or ganache.
- Stencil with our Macaron Cookie Stencils using an airbrush application, or apply with a small amount of royal icing.
