How to Stencil the Side of a Cake (Buttercream or Royal Icing)
-
Ensure the cake icing is completely dry. Let it dry overnight or chill in the fridge/freezer for about 30 minutes.
-
Secure the stencil flat against the cake using pins or gentle pressure. Ensure it is level.
-
Spread royal icing or buttercream over the stencil using an offset spatula or scraper, making sure all openings are filled.
-
Use a cake smoother or spatula edge to remove excess icing. Leave about 2 mm thickness (roughly the thickness of the stencil).
-
Carefully peel the stencil away from one side to the other to reveal the design.
-
Allow icing to fully dry before repeating the pattern around the cake.
-
Clean the stencil between uses so all openings remain clear.
Once dry, you can enhance the design with airbrushing, luster dust, edible paints, candy accents, or decorative drips.
