Easy Chocolate Cut Out Cookie Recipe

Chocolate Cookie Recipe 

Ingredients 

Makes 36 cookies  

  • 1 ½ cup granulated sugar  
  • ¾ cup softened salted butter  
  • ¼ cup dark corn syrup  
  • 2 eggs  
  • 2/3 cup cocoa powder  
  • 1 teaspoon vanilla extract  
  • 3 – 3 ½ cup flour  
  • ¼ teaspoon baking powder  
  • ½ teaspoon salt  

Method 

  1. Line baking trays with baking parchment.  
  2. Cream the butter and sugar together in a stand mixer with the paddle attached.  
  3. Add corn syrup, eggs, and vanilla extract. Mix slowly until combined.  
  4. Sift all the dry ingredients in a separate bowl to blend.  
  5. Add dry ingredients to the other bowl bit by bit and mix on low until combined.  
  6. Split the dough into 3 equal portions.  
  7. Roll until ¼ inch thick between 2 sheets of baking paper.  
  8. Leave to chill in the fridge for at least 1 hour.  
  9. Preheat the oven to 375°F. 
  10. Remove cookies from the fridge and cut them into desired shapes.  
  11. Bake for 10-14 minutes. They are done when the edges are dry, and the center slightly rises.  
  12. Allow them to cool, and enjoy!  

Tip: Make sure you leave time to chill your cookie dough! This is the most crucial step, as this is a stickier dough than regular sugar cookies. Without it, the cookies will be difficult to cut and lose shape when baked.
