Typically, royal icing flavoring is vanilla and white in color, but we will show you how to make the best-tasting chocolate royal icing out there!
Many people have heard of royal icing. Usually bright white in color, and often paired with marzipan, the icing is a great topper for cakes, cookies, and muffins! But you can switch it up, and make a Chocolate royal icing that is DELISH! Best of all, it is really simple! Also, we will talk about things to avoid when making it so you get a professional finish.
Ingredients:
To make a full batch (to ice a medium to large cake):
- 3 cups standard royal icing (use our Royal Icing Guide to make your own, or use Satin Ice Royal Icing Mix)
- 3 tablespoons of good quality cocoa.
To make a small batch (for a small to medium cake or cupcakes):
- ½ cup of standard royal icing (use our Royal Icing Guide to make your own, or use Satin Ice Royal Icing Mix)
- 1-1/2 cups of good quality cocoa
Directions: Making The Icing
- When you want to make a full batch, add the cocoa while adding the second half of the powdered sugar. You will want to avoid overmixing, and adding the ingredients this way will ensure that the icing spends less time in the electric mixer.
- If you need to add more powder, you may need to add more water.
- If you are looking to make a half batch, you can use fresh or store bought icing and can mix the cocoa in by hand.
- You should aim to blend the icing with the lowest speed on your mixer. A setting that is too high will add too much air, leaving you with an icing that looks like a sponge!
- Under and overmixing are the bane of getting a smooth finish with royal icing. If the sugar and the icing aren’t stiff enough when mixing, add a tablespoon of powdered sugar until it reaches the desired consistency.
